BELIEVED ORIGIN

In Medieval times, a rogue market trader selling pigs would
place the pig in the bag with an instruction that the buyer
should not open the bag until they had left the market. Upon
opening the bag, the buyer would discover that they had in fact
been given a cat instead of a pig. Hence, the trader's secret
was revealed when they "let the cat out of the bag".
